Chef Brendon


Brendon Collins formerly of Nelson Bay is the head chef at the Innamincka Hotel.  Brenno worked for 2 years as the breakfast/lunch chef at the Birdsville Hotel.  And has a love for the country. Brendon loves cooking home-style meals and pasta.

The other talent in the kitchen is Justin Murphy who is contracted by Bluestone Personnel. Justin is keen to experience all the Outback has to offer and brings with him a wealth of experience. His career highlights include working for Matt Moran’s Iria Restaurant in Sydney and in Waterford, Ireland

The Innamincka Chefs promise to bring you signature dishes of OBE organic channel country beef.  As they cook with passion and enthusiasm it can be promised that you will enjoy the great tastes of the bush when you experience fine dinning at the Innamincka Hotel.
